Notes
Tiny metal residue may leave dark marks on cutting boards after sharpening. Wooden cutting boards are especially prone to staining.
To prevent this:
- Place a cloth on the cutting board before sharpening to prevent scratches or marks.
- Rinse and dry the knife thoroughly after sharpening.

Quick Maintenance
Surface used: #1000 Medium Diamond Disc
- Attach the knife to the magnetic holder, ensuring the blade lies flat against the table for stability.
- Roll the #1000 diamond disc back and forth along the edge about 5–10 times on each side.
- This realigns the edge and restores smooth cutting performance without a full sharpening session.
Full Sharpening
Surface used: #400 Coarse Diamond Disc and #1000 Medium Diamond Disc
- Attach the knife to the magnetic holder and ensure the blade is flush with the table.
- Use the #400 coarse diamond disc and roll it back and forth about 20 times on each side to restore the edge.
- Switch to the #1000 medium diamond disc to refine the blade and remove burrs until the knife reaches a razor-sharp finish.
